Most of the time I make up my own recipes for the crock~pot. I will take an idea of something I ate, seen on t.v., or something my parents have made and make it into my own. My husband is my best critic. He is always very generous and complimentary of my cooking.  I have to say, I don’t think he has ever given me a bad review.

This is one of his favorites: Sausage Gumbo

1 whole sausage link (like Hillshire Farm Polska Kielbasa) cut 1/2 inch rounds

4 cups chicken broth ( I use chicken bouillon cubes with water. 1 cube to 1 cup of water)

28-oz can crushed tomatoes

1 tsp. Italian seasoning (with rosemary and oregano)

15.5-oz garbanzo beans drained and rinsed

2 cloves garlic, minced

salt and pepper to taste

2 cups cooked white rice

garnish: shredded mozzarella cheese

Combine all ingredients except for rice in crock~pot. Heat on low setting for 6 hours.  Spoon gumbo in separate bowls. Top with 1/2 cup of cooked rice and shredded cheese.

This is the beginning of my journey for recipes in the crock-pot to share with you. My first recipe, ” Colorado Chili” for the winter season. Enjoy!


Colorado Chili

1 lb. ground beef, browned and drained

A sprinkle of onion powder

1/2 onion chopped

1/2 tsp cumin

28-oz. can crushed tomatoes

15-oz. black beans, rinsed and drained

15-oz. chili beans

15-0z. can white corn

1.5-oz. package taco seasoning

1-oz. ranch salad dressing mix

Garnish: shredded cheddar cheese and mozzarella, a dab of sour cream, Fritos

Brown meat and sprinkle with onion powder. Drain. Combine and stir all ingredients in the crock-pot except for garnish. Cover and cook for 6 hours on low setting. Spoon into individual bowls and add garnish. Makes 6-8 servings.
